Back in 1943, when Ike Sewell opened a restaurant at the corner of Ohio and Wabash Streets in Chicago, Americans ate pizza primarily as a snack. Ike figured that if you combined some of Italy's old, authentic recipes with impressive quantities of the finest meats, fresh cheeses, ripe vegetables and flavorful spices, pizza would become a hearty meal. He redefined pizza by creating a deep-dish crust and filling it with huge quantities of fresh, delicious ingredients. In doing so, he started an American tradition: the Chicago Deep Dish Pizza. He also established "the Uno Way" - using only the freshest ingredients and lots of 'em.

In Chicago, eating pizza became a dining experience, and the signature deep-dish pizza at Uno's became a unique dish that loyal customers loved. Back then, customers ordered as they stood waiting for a table in the crowded restaurant, because the made-to-order deep-dish feast took 45 minutes to bake. As the number of customers grew, Ike needed more room and soon opened Pizzeria Due on a corner opposite his original restaurant, in the lower level of a beautiful, Victorian Mansion. The second chapter of the legend was written. Today, Pizzeria Uno and Due are the most celebrated pizza restaurants in the world. They've been mentioned in gourmet cookbooks, written about in magazines and major newspapers and featured on television and radio shows.

Ike's Original Deep Dish Pizza has often been imitated but never quite duplicated. The innovation and quality of this signature dish inspired the creation of a variety of favorite dishes, each prepared in an innovative manner and in the tradition of the Uno Way - hand-crafted with the highest quality ingredients.

The Uno Concept Evolves
Because of the popularity of its signature dish, Pizzeria Uno was often perceived as a pizzeria rather than a casual dining restaurant with a variety of menu options. In the mid 1990s, Uno Restaurants broadened its concept to encompass favorite dishes that diners expected from a high quality, full-service restaurant. To expand the menu and meet increasing customer expectations, Uno's completed a multi-million dollar kitchen upgrade in its restaurants, installing sauté stations, grills and fryers, and invested heavily in the training of its front and back of the house staff. Uno guests now choose from a full range of meals including steaks, pasta, ribs, seafood, burgers and sandwiches, along with its specialty deep dish and thin-crust pizzas.

Uno's also changed its name and redesigned its restaurants to fully capture the casual, full-service concept. The new Uno Chicago Grill locations are larger and feature a "Chicago warehouse" look that creates an inviting casual dining environment. These new prototype restaurants continue to generate above-average sales volume.

From humble beginnings and the launch of a signature dish more than 60 years ago, Uno's continues to grow in the casual dining segment of the restaurant industry.
